A turnip you eat raw. Brassica rapa 'Hakurei' is the Japanese salad turnip that set the standard — smooth, pure white, flat-round roots that are sweet and almost fruity, juicy and crisp, with none of the sulphur pungency of a storage shalgam. Ready in 38 days, and the smooth tops are edible too, so one sowing gives you two vegetables.

Growing Guide for Pakistan
- Sowing time: Punjab plains (Lahore, Faisalabad, Multan) late September to February; Islamabad, Rawalpindi and Peshawar September to January; Karachi and coastal Sindh October to December; Murree, Swat and Quetta February to April. Fast enough to sow every two to three weeks right through winter.
- Method: Sow 6–13 mm deep in a band, seeds about 2.5 cm apart.
- Germination: Five to seventeen days at 13–24°C.
- Spacing: Rows 30–45 cm apart. Thin to 5 cm for small roots, 10 cm for larger ones.
- Harvest: Radish-sized at about 30 days; best quality at 38–45 days, up to 5 cm across. Do not let them get big.
- Sun and water: Full sun. Consistent water; a dry check makes any turnip woody and hot.
Pick them small
The single rule with Hakurei: harvest at or under 5 cm. Unlike ordinary turnips it stays smooth rather than going corky as it sizes, but the sweetness is at its peak when the root is still small. Sow a short row every two weeks instead of one long row.
Eat the tops
Hakurei's leaves are smooth rather than bristly, so they are pleasant raw in a salad and excellent sautéed with garlic. Bunch root and top together the way they do in Japanese markets.
