Growing Guide for Pakistan

• Sowing time: Punjab plains (Lahore, Faisalabad, Multan) late September to early November; Islamabad, Rawalpindi and Peshawar September to October; Karachi and coastal Sindh October to November; Murree, Swat and Quetta February to March. It will also take an earlier sowing than most spinach because of its heat tolerance.
• Method: Sow 13 mm deep directly where it will grow. Spinach dislikes being moved.
• Germination: Seven to fourteen days. Soil above 30°C gives poor and erratic germination — sow once the worst heat has passed.
• Spacing: Sow 2.5 cm apart in rows 30 cm apart, then thin to 10–15 cm.
• Harvest: 43–55 days to full size. Pick outer leaves and the plant keeps producing.
• Sun and water: Full sun in winter. Water at the base; wet leaves in cold weather invite mildew.

Flat-leaf spinach collapses into water. The crinkled savoy leaf of America keeps its body through cooking, which is exactly what you want for palak gosht or a dry bhujia — you get spinach you can still see on the plate.

An heirloom, so save your own seed

This is an open-pollinated heirloom, not a hybrid. Let two or three of your best plants run to seed at the end of the season and you can sow your own next winter, and it will come true.
