Grow your own red bell peppers — Red Mercury ripens from green to a deep glossy red on thick, blocky, four-lobed fruits. Sweet enough to eat raw and sturdy enough to stuff, and it colours up reliably rather than sulking at green, which is where most bell peppers disappoint.

Growing guide for Pakistan
- When to sow: October to December in nursery trays for transplanting in January and February, which is the standard Punjab timing. Karachi can sow from September.
- Sowing: Sow 5 mm deep in trays and transplant at five or six true leaves, spacing 45 cm apart.
- Soil and feeding: Well-drained soil with well-rotted gobar. Switch to a potash-rich feed once the first flowers open — too much nitrogen gives a big green plant and no fruit.
- Water: Even moisture. Irregular watering causes flower drop and blossom-end rot on the fruit.
- Heat: Above about 35 °C the flowers drop. Time the crop so it sets before the peak of May, and give afternoon shade if you can.
- Harvest: Cut with scissors rather than pulling, leaving a short stalk. Picking green keeps the plant producing; leaving fruit to colour gives sweeter peppers but a smaller total crop.
