Grow your own Swiss chard — Fordhook Giant is the old broad-leaved standard, with thick white stems and dark, heavily crinkled leaves. Cut the outer leaves and it crops from November right through to the heat of April. Cooked it does everything palak does, and it lasts far longer in a Punjab winter.

Growing guide for Pakistan
- When to sow: September to November in the plains for a long winter crop, and again in February. Chard is far more forgiving of heat than spinach, so it carries on well into April.
- Sowing: Sow direct 2 cm deep, rows 40 cm apart. Each “seed” is a cluster that throws several seedlings, so thin them to one every 25–30 cm.
- Soil and feeding: Rich, well-manured ground. A nitrogen feed after every second or third cutting keeps the leaves broad and tender.
- Water: Regular and even. Chard will survive a dry spell but the leaves turn tough and the stems go stringy.
- Harvest: Cut the outer leaves at the base with a knife and leave the crown intact. One sowing will feed a household for months.
- Bolting: If it throws a flower stalk in spring, cut it out at once and you will usually get several more weeks of leaf.
