Not a mustard and not a kale — Brassica carinata is its own species, grown across the Ethiopian highlands for centuries. The leaves are dark green, gently crinkled with a scalloped edge, and unusually succulent. The flavour is the surprise: deeply savoury with spice and garlic notes, richer than any mustard. Baby leaf in 21 days, full size at 40.

Growing Guide for Pakistan
- Sowing time: Punjab plains (Lahore, Faisalabad, Multan) late September to February; Islamabad, Rawalpindi and Peshawar September to January; Karachi and coastal Sindh October to December; Murree, Swat and Quetta February to April. Fast enough to sow every two to three weeks right through winter.
- Method: Sow 6 mm deep — thickly in bands for baby leaf, or 2.5 cm apart for full plants.
- Germination: Two to fifteen days, across a wide temperature range from 4°C to 24°C.
- Spacing: Baby leaf: rows 5 cm apart. Full size: thin to 15–45 cm, rows 25–45 cm.
- Harvest: Baby leaf at 21 days; full leaves at 40 days, picking from the outside inwards.
- Sun and water: Full sun to part shade. Water steadily; drought makes the leaf tough and sharp.
Rated extra cold tolerant
Of all the greens in this range this is the one to sow if you garden in Murree, Swat, Abbottabad or Quetta. It is rated extra cold tolerant and keeps producing when the mustards have given up.
Cook it briefly
The leaves are tender enough to eat raw at baby size. At full size they need only a minute in a hot pan with garlic — over-cook them and you lose the savoury quality that makes this worth growing.
