Grow your own garlic chives — flat, strap-like leaves with a clear mild garlic flavour, the herb that goes into dumplings, stir-fries and cut into noodles at the last moment. Tougher and more heat-tolerant than ordinary chives, with white star flowers in autumn.

Growing guide for Pakistan
- When to sow: September to November, or February to March, in the plains. Chives are perennial here and a clump once established will come back year after year.
- Sowing: Sow 5 mm deep in a pot or tray, several seeds together — chives look and crop best as a clump rather than as single plants. Germination takes two to three weeks, so do not give up early.
- Position: Full sun in winter, some afternoon shade from April onwards.
- Water: Regular. The leaves go thin and papery if the pot dries out.
- Harvest: Cut the leaves 2 cm above the soil with scissors, taking a whole handful rather than snipping tips. It regrows within a fortnight.
- Flowers and division: The mauve flowers are edible and good in salads, but cutting them off keeps the leaf coming. Split a crowded clump in autumn every second or third year.
