Grow your own celery — Tall Utah gives long, straight, thick green stalks in a tight upright bunch, crisp enough to eat raw and stringless when it is grown fast and wet. It needs the full cool season and more water than you think, and it rewards both.

Growing guide for Pakistan
- When to sow: August to October in nursery trays, transplanting in October and November. Celery is slow — three to four months — and it needs the whole cool season.
- Sowing: The seed is tiny and needs light. Press it onto the surface of damp compost and do not cover it. Germination takes two to three weeks.
- Transplanting: Move on at five or six true leaves, 25 cm apart each way. Planting in a block rather than a row helps the stalks stay upright and tender.
- Water, water, water: This is the whole secret. Celery grew wild in marshland and it will not forgive a dry week — the stalks go stringy and hollow and stay that way.
- Feeding: Rich, heavily manured ground and a liquid feed every fortnight.
- Blanching: Wrapping the bunch loosely with paper or earthing up for the last two or three weeks gives paler, milder, sweeter stalks.
