Growing guide for Pakistan
- When to sow: September to November in the plains, and on through to February for a late crop. Mustard is a cold-weather green — sown into heat it bolts to flower within weeks.
- Sowing: Sow direct 1 cm deep in rows 30 cm apart. It germinates in three or four days, which makes it the quickest satisfaction in the winter garden.
- Thinning: Thin to 15–20 cm for full-sized leaves, or leave it thick and cut it young as a salad green. The thinnings are worth eating.
- Soil and feeding: Ordinary garden soil with well-rotted gobar worked in, and a nitrogen feed after each cutting to keep the leaves coming.
- Water: Steady moisture. Dry soil makes the leaves tough and a good deal hotter.
- Harvest: Cut the outer leaves and leave the centre to grow on — one sowing crops for weeks. Once a flower stalk appears the leaves turn bitter, so cut hard before that.

Yes. A shallow trough 20 cm deep, sown thickly and cut young, gives the best leaves — and cutting young keeps the heat out of them.
