Japanese mustard spinach — the everyday green of a Japanese kitchen, and a natural fit for Pakistani cooking. Brassica rapa var. perviridis makes upright dark green leaves on long narrow stalks, ready as baby leaf in 21 days and full size in 35. The flavour sits between spinach and a mild mustard, with none of spinach's tendency to collapse in the pan.

Growing Guide for Pakistan
- Sowing time: Punjab plains (Lahore, Faisalabad, Multan) late September to February; Islamabad, Rawalpindi and Peshawar September to January; Karachi and coastal Sindh October to December; Murree, Swat and Quetta February to April. Fast enough to sow every two to three weeks right through winter.
- Method: Sow 6 mm deep — thickly in bands for baby leaf, thinly for bunching.
- Germination: Five to ten days.
- Spacing: Baby leaf: rows 5 cm apart. Bunching: rows 30–45 cm, plants 10 cm apart.
- Harvest: Baby leaf from 21 days; full bunches at 35 days.
- Sun and water: Full sun. Water steadily; it is fast enough that any check shows in the leaf.
Slow to bolt
Green River replaced the older variety Carlton specifically because it holds at baby-leaf size much longer before running to flower. In practice that means a wider harvest window and less waste — you are not forced to pick the whole bed in one week.
Cooks better than spinach
Komatsuna keeps its body under heat where palak turns to water. Use it anywhere you would use spinach — with garlic, in daal, in a stir-fry — and it holds its shape.
