Growing guide for Pakistan
- When to sow: September to November in the plains. Florence fennel bulbs up in cool, settled weather; sown into rising heat it runs to seed instead.
- Sowing: Sow direct 1 cm deep and thin to 25–30 cm apart. It dislikes being moved, so avoid transplanting if you can.
- Soil: Rich, moisture-holding ground with plenty of well-rotted compost worked in.
- Water: Generous and regular. A check in growth is the main cause of bolting.
- Earthing up: Draw soil around the swelling bulb once it reaches the size of an egg, to keep it white and sweet.
- Harvest: Cut the bulb at ground level when it is about the size of a tennis ball. The feathery tops are a herb in their own right — use them as you would dill.
