Grow your own leeks — American Flag is the old heirloom standard, thick white shanks under broad blue-green flags, sweeter and gentler than any onion. Almost unknown in Pakistani markets and completely at home in a Punjab winter, if you are willing to wait five months.

Growing guide for Pakistan
- When to sow: September to October in a nursery bed, transplanting in November and December. Leeks are slow — five months from sowing — so an early start matters.
- Transplanting, the leek way: Make a hole 15 cm deep with a dibber, drop one seedling in, and fill the hole with water rather than soil. The stem blanches white as the hole fills in on its own.
- Spacing: 15 cm apart in rows 35 cm apart.
- Earthing up: Draw soil up around the stems every few weeks. Every centimetre you bury is another centimetre of white shank, which is the part worth eating.
- Soil and water: Rich, deep, well-manured ground and steady moisture. Leeks are hungry and they do not sulk quietly — they simply stay thin.
- Harvest: Lift as needed from midwinter onwards. They stand in the ground in good condition for weeks, so there is no rush.

Will this grow in a pot?
Yes, in a deep one. Give it 30 cm of depth so there is soil to earth up around the stem, which is where the white shank comes from.
How many seeds are in the packet?
Enough for a home garden bed or a run of pots. Sow a few more than you need and keep the strongest seedlings.
