Grow your own asparagus — Mary Washington, the 1900 American heirloom that made the crop reliable, with thick green spears and good rust resistance. It takes three years to reach a first cutting and then crops for fifteen or twenty. Plant it once, in a place it can stay.

Growing guide for Pakistan
- The long game: Asparagus is a perennial that crops for fifteen or twenty years, but you do not cut a spear in the first two. Year one grows the crown, year two builds it, year three you start picking. Plant it where it can stay.
- When to sow: October to November in the plains, in a nursery bed or deep trays.
- Sowing: Soak the seed overnight, sow 2 cm deep, and expect three to six weeks to germinate. Grow the seedlings on for a year before moving them to their permanent bed.
- The bed: Deep, free-draining, heavily manured ground, ideally raised. Crowns 40 cm apart in trenches 20 cm deep, filled in gradually as the plants grow.
- Aftercare: Let the ferny top growth stand all season — that is what feeds next year's spears. Cut it down only when it yellows, and mulch the bed each year.
- Harvest: From the third spring, cut spears at ground level for six to eight weeks, then stop and let the plant recover.
