Grow your own globe artichokes — large silver-leaved architectural plants carrying fat green buds on tall stems. A long-term crop that gives its first real heads in the second season and then keeps giving for years. Almost impossible to buy fresh in Pakistan, which is rather the point of growing it.

Growing guide for Pakistan
- When to sow: August to October in nursery trays for transplanting in November. Grown from seed, an artichoke usually gives its first proper heads in its second season — this is a plant you commit to, not a quick crop.
- Sowing: Sow 1 cm deep and grow the seedlings on until they are sturdy before moving them out.
- Spacing: A metre apart each way. These are large, architectural, silver-leaved plants and crowding them wastes them.
- Soil: Deep, rich, free-draining ground. Artichokes will take a Punjab winter well but wet feet in the monsoon will rot the crown, so plant on a slight mound.
- Summer: Cut the plant back and mulch it heavily before the peak of the heat, and it will come away again in autumn.
- Harvest: Cut the buds while the scales are still tight, starting with the large king head at the top of the stem. Once the scales open the head is past eating.

Not really. An artichoke needs a metre of space and several years in the ground to earn its keep.

Enough for a home garden bed or a run of pots. Sow a few more than you need and keep the strongest seedlings.
