An heirloom Beta vulgaris grown mainly for its leaf — deep burgundy, almost black-red, and unusual in that it holds that colour even in weak winter light where other red leaves fade to green. Baby leaf at 35 days. Leave some plants in and you also get roots at 58 days, candy-striped in concentric rings when you slice them.

Growing Guide for Pakistan
- Sowing time: Punjab plains (Lahore, Faisalabad, Multan) late September to February; Islamabad, Rawalpindi and Peshawar September to January; Karachi and coastal Sindh October to December; Murree, Swat and Quetta February to April. Fast enough to sow every two to three weeks right through winter.
- Method: Sow 6–13 mm deep, one to two seeds per 2.5 cm for baby leaf; 13 mm deep and thinner if you want roots.
- Germination: Five to seventeen days. Start once soil is above 7°C.
- Spacing: Baby leaf: rows 5 cm apart. Roots: thin to 5 cm, rows 30–45 cm.
- Harvest: Cut baby leaf at 7–15 cm, from 35 days. Recut every one to two weeks. Roots from 58 days.
- Sun and water: Full sun for the deepest colour. Steady water — dry spells make the leaf leathery.
Two crops from one packet
Sow the row thickly, cut baby leaves for the first month, then stop cutting a section and let those plants size up into roots. You get salad now and beetroot later from the same sowing.
Certified organic, and an heirloom
USDA certified organic seed, and open-pollinated, so you can save your own. Each beet 'seed' is actually a cluster of two or three, which is why beet rows always need thinning.
