Grow your own Green Globe artichoke (Cynara scolymus), the 1863 heirloom and still the standard variety worldwide. Enormous silver-leaved plants topped with the edible flower buds that sell for a fortune in Pakistan when they appear at all. Perennial — plant once and crop for several years.

Growing guide for Pakistan
- Sowing time: August to September in nursery trays in the plains; February to March in Islamabad, Murree, Swat, Abbottabad and Quetta, where artichokes do best.
- Method: Trays, 10 mm deep. Soak the seed overnight first — the coat is hard.
- Germination: 10–21 days at 21–25°C. Slow and uneven; do not give up on the tray early.
- Transplanting: At 6–8 true leaves, 90 cm apart. These are large architectural plants, more than a metre across — give them the room.
- Sun and water: Full sun, deep rich soil, steady water. Mulch heavily. Cut the plant back after cropping and it will come again next season.
- Harvest: about 85–120 days from transplant in the first season, and earlier every year after. Cut the buds with 8 cm of stem while the scales are still tight — once they open the choke is woody.
- Where it works: Best in Islamabad, Murree, Swat, Abbottabad and Quetta. It will grow in the plains as an annual but the buds come smaller.
- Also ornamental: Left to flower it opens an enormous violet thistle head that dries well for the house.

Will this grow in a pot?
Yes. Use a pot of at least 12 inches (30 cm) with drainage holes, one plant per pot, in full sun. A balcony in Lahore or a rooftop in Karachi works well.

Enough for a home garden bed or a run of pots. Sow a few more than you need and keep the strongest seedlings.
